Zucchini is an amazing vegetable. It lends itself to so many delicious transformations. I am sure you are knowledgeable about traditional zucchini recipes, such as adding it to pasta or filling zucchini halves with a stuffing mixture or making zucchini fries or zucchini bread. But, did you know that this vegetable can be turned into small patties or a zucchini patty pizza crust?
These days, I am very fond of making zucchini patties. They are delicious and make a great side dish for dinner, or a bottom for fried eggs for breakfast, or a low carb grilled cheese sandwich for lunch. I usually double and sometimes triple the recipe to keep in the refrigerator for quick meals. To keep the patties low carb, use arrowroot powder or cornstarch instead of flour.
Zucchini Patties
Makes 8-4 inch pattiesIngredients:
2 cups grated zucchini
1 large egg
1 garlic clove, grated
2 green onions, finely minced
1/4 cup arrowroot powder or cornstarch or flour
Kosher salt
Freshly ground black pepper
1 cup shredded Cheddar cheese
1 cup shredded mozzarella cheese
A few tablespoons of melted butterDirections:
Place the grated zucchini on a kitchen towel and sprinkle the zucchini lightly with kosher salt. Let rest 30 minutes. Squeeze the excess moisture out of the zucchini with the towel.
In a medium bowl, combine the zucchini with the egg, garlic, green onions, and arrowroot powder. Stir in the cheddar and mozzarella cheeses. Season with black pepper to taste.Brush a large stove top griddle pan or large skillet with some of the melted butter, Scoop 1/4 cup of the zucchini mixture onto the griddle and pat it flat with a metal spatula. Add as many patties as you can to the pan without letting them touch each other.
Cook until golden brown and crispy on both sides, about 4 minutes per side. Remove from the pan and keep the cooked patties warm in a low oven until all the patties are made.Extras can be wrapped in foil and stored in the refrigerator for a week. The patties can also be made into mini pizzas.
To make one large zucchini patty pizza crust:
Make zucchini mixture above.
Oil a 12-inch pizza pan and preheat the oven to 350 degrees F.
Spread the zucchini mixture in the pan with a silicone spatula. Bake for about 20 minutes, until there are brown spots on the top.
Remove the pan from the oven. Increase the oven temperature to 400 degrees F. Let the crust rest for 10 minutes at room temperature, then top with your favorite sauce, toppings and a sprinkling of shredded mozzarella cheese.
Return the zucchini patty pizza to the oven for about 10 minutes, until the toppings are hot.
